CHOCOLATE ICE-BOX CAKE


Icebox cakes are desserts that cook in your fridge or freezer, rather than your oven, and yet yield slices of tender cake layers, filled with airy whipped cream and chocolate goodies or fresh summer fruit sometimes.

You simply layer tea biscuits (originally graham crackers are used, but they aren't available where I live, so tea biscuits work just perfect) with whipped cream and comestibles of your choice. No baking required.

Anyhow, I think icebox cakes are a greaaatt idea for big parties — and why not? They feed a crowd, can be made ahead of time and are sooo easy.

INGREDIENTS:

  • 2 packs Dream Whip/Cool Whip (prepare as directed on the package)

  • 3 tablespoons powdered sugar

  • 3 tablespoons cocoa powder

  • 1 pack tea biscuits

  • Add-ins: Toblerone, m&ms, chocochip cookies

METHOD:

  • Line a 9-inch loaf pan with plastic wrap and leave overhang to wrap in the end (you can use any dish or pan)

  • Prepare whipped cream with an electric mixer until soft peaks form. Take out 1 cup of whipped cream into a separate bowl; add powdered sugar and cocoa powder and mix.Gently fold chocolate mixture into whipped cream, taking care not to deflate cream. You'll get a mousse like texture.

  • Spread a little mousse on bottom of the lined pan. Arrange 3 biscuits in a single layer on it. Scrape 1/2 a cup of mousse over biscuits and spread.

Honestly, you can have as many layers as you want and add anything you like, peanuts, chocolate chips, reeses cups, chopped chocolate, smarties.. anything!

  • Cover pan with plastic; refrigerate for at least 6 hours, preferably overnight. Take cake out from the tin, flip it upside down on a serving plate, adorn with cream, chocolate shavings or sauce if desired and serve
